pumpkin cheesecake

  • Question:-Pumpkin Cheesecake?
I need a really good no-bake pumpkin cheesecake recipe. I'm hoping someone out there knows one. Please help, Thanksgiving is tomorrrow in Canada.

    Answer:-Hello:

Go to either one of these food websites and they should have the recipe that you are looking for:

    www.kraftfoods.com

    or

    www.allrecipes.com
  • Question:-Is there a good pumpkin cheesecake recipe?
Looking for a really good pumpkin cheesecake recipe. My skill in the kitchen is not beginner but not an expert...I really enjoy baking!

Answer:-Preheat oven to *350 and place oven rack in the center of the oven. Butter (or spray with a non stick spray) an 8 inch (20 cm) spring form pan.

For Crust: In a medium sized bowl combine the graham cracker crumbs, finely ground ginger snap cookies, sugar, and melted butter. Press the mixture onto the bottom of the prepared spring form pan. Cover and refrigerate while you make the cheesecake filling.

For Cheesecake: In a separate bowl, stir to combine the sugar, cinnamon, ginger, cloves, nutmeg, and salt.

In the bowl of your electric mixer (or with a hand mixer), on low speed, beat the cream cheese until smooth (about 2 minutes). Gradually add the sugar mixture and beat until creamy and smooth (1 to 2 minutes). Add the eggs, one at a time, beating well (about 30 seconds) after each addition. Scrape down the sides of the bowl and beat in the vanilla extract and pumpkin puree.

Pour the filling over the chilled ginger crust and place the spring form pan on a baking sheet to catch any drips. Place a cake pan, filled halfway with hot water, on the bottom shelf of your oven to moisten the air. Bake the cheesecake for 30 minutes and then reduce the oven temperature to 325 degrees C (165 degrees C) and continue to bake the cheesecake for another 10 - 20 minutes, or until the edges of the cheesecake are puffed but the center is still wet and jiggles when you gently shake the pan.

Meanwhile whisk together the sour cream, vanilla extract and sugar. Pour the sour cream mixture over the top of the baked cheesecake and rotate the pan slightly to evenly distribute the topping. Return the cheesecake to the oven and bake about 8 minutes to set the topping. Remove from oven and place on a wire rack to cool. Loosen the cake from the pan by running a sharp knife around the inside edge (this will help prevent the cake from cracking). Then place a piece of aluminum foil over the top of the pan so the cheesecake will cool slowly. When completely cooled, cover and refrigerate at least eight hours, preferably overnight, before serving.
    Serves 10-12 people.

    Crust:

1 cup (100 grams) graham cracker crumbs

1/2 cups (50 grams) finely ground ginger cookies, homemade or store bought

1 tablespoon (15 grams) granulated white sugar

    4 - 5 tablespoons (56 - 60 grams) unsalted butter, melted

    Cheesecake:

2/3 cup (145 grams) light brown sugar

    1/2 teaspoon ground cinnamon

    1/4 teaspoon ground ginger

    1/8 teaspoon ground cloves

    1/8 teaspoon ground nutmeg

    1/4 teaspoon salt

1 pound (454 grams) cream cheese, room temperature

    3 large eggs

    1 teaspoon pure vanilla extract

1 cup pure pumpkin puree (canned or homemade)

    Topping:

    1 cup sour cream

1 teaspoon pure vanilla extract or vanilla bean paste

1/4 cup (50 grams) granulated white sugar
  • Question:-Is there a way to make something like a pumpkin cheesecake roll but without the pumpkin?
I was planning on makeing a pumpkin cheesecake roll for thanksgiveing but all of the stores are sold out of pumpkin. I'm wondering if I can use that same idea and make it more of a cake/cheescake roll?
    Any ideas?

    Answer:-go to cooks.com
  • Question:-What are some tips on transporting a pumpkin cheesecake?
I am making a pumpkin cheesecake to bring to my aunt's house for thanksgiving. It is a 3 hour drive and I am making and storing it in a springform pan. Should I put it in a cooler with ice or keep it room temperature?

Answer:-Freezing cheesecake changes the texture in what I view to be an unpleasant way.

Sun Tzu teaches us to make our weaknesses in to strengths. XoD Your weakness: 3 hour drive.

What I'd suggest doing is pre-heating the oven to bake it 2.5 hours before you leave, cooking it for the 40-45 minutes needed at 350, cooling it in the oven for half an hour, cooling it on a wire rack for one hour and then putting it on your lap still warm to cool during the three hour ride with aluminum foil covering it and a few holes poked in the foil to allow steam to escape so it doesn't condense and drip on to your lovely pumpkin cheesecake. Pumpkin cheesecake is on a very short list of cheesecakes that can go straight from counter cooling in to your tummy tum and still be yummy. It'll be a little bit better if you refrigerate it for 2 hours after arriving. But it's not necessary, and won't make any difference at all if you do what I'm about to tell you because every one's head will explode from the goodness.

Top it with dulcé de leche (made in advance) and ground cinnamon pecans or candied pralines. Dulcé deleche is the world's greatest caramel ever - made by boiling a can of condensed sweetened milk for 2 hours, making sure to keep the water level above the can for even boiling. Then let the can cool, open it, and pour on top of your pie, followed by said nuts.

This is the way to make pumpkin cheesecake. I swear to you. Even people who hate pumpkin, caramel, cheesecake and nuts like this stuff. And make sure you spice the heck out of it. I finish mine by lightly dusting the top with cinnamon, nutmeg and allspice before putting the caramel layer on top. You can't see the difference, but by god, can you ever taste it.
  • Question:-Anyone know a good recipe for Pumpkin Cheesecake?
I want one that is tall and layered with chocolate chips.
Or any other tall cheesecake or pumpkin dessert.
I made a layered one from Good Housekeeping ( this months issue) however I found it small and dull. The idea is great because it is more colorful. You have a layer of cheesecake , a layer of Chocolate chips and top that off with a layer of pumpkin pie. Needs to be higher for better presentation.

Answer:-the country cream is optional, but tastes great. you can serve it plain, with regular whipped cream, or anything that sounds good to you!

Pumpkin Chocolate Chip Cheesecake With Country Cream

    Crust:
1 1/2 cups graham cracker crumbs
    4 tbsp confectioners’ sugar
    6 tbsp butter, melted

    Filling:
1lb (450g) cream cheese, at room temperature
    1/2 cup granulated sugar
    2 eggs
    1/2 tsp vanilla extract
    1/2 cup canned pumpkin purée
    1 tsp ground cinnamon
    1/2 tsp freshly grated nutmeg
    1/2 tsp ground cloves
    1/2 cup semisweet chocolate chips

    Country Cream:
    1/2 cup sour cream
    1/2 cup mascarpone
    1/2 cup plain, whole-milk yogurt
    1/2 cup granulated sugar
    2 tsp vanilla extract

Prepare the crust: In a large mixing bowl, combine the crumbs, sugar, and butter, and knead together until well blended.

Press evenly over the bottom and sides of a 9in (23cm) spring form pan. Chill until needed.

Preheat the oven to 350°F (180°C).
In the bowl of an electric mixer fitted with the paddle attachment, beat the cream cheese and sugar together until smooth.

Add the eggs and vanilla, and mix until well blended. Add the pumpkin purée and spices, and continue mixing until thoroughly combined.

Remove the mixing bowl from the machine and fold in the chocolate chips with a rubber spatula.

Pour the filling into the chilled crust.
Place in the oven and bake for 30–40 minutes. The center of the cheesecake should feel somewhat firm to touch.

Let the cheesecake cool to room temperature, then refrigerate, covered, for at least 6 hours or overnight.

To make the country cream, place all the ingredients in a deep mixing bowl and set the bowl over a larger bowel filled with ice.

Whisk together until the mixture will hold soft, smooth peaks and is the consistency of whipped heavy cream. (This makes 2 cups of country cream. It can be kept, covered, in the refrigerator for up to 3–4 days.)

To serve the cheesecake, remove the sides of the spring form pan. Cut the cheesecake into portions and serve topped with the country cream. Alternatively, serve the cheesecake with plain whipped cream, or with chocolate sauce or ice cream.

by just adding pumpkin and some spices (nutmeg, cinnamon, and cloves)? Do you think that would turn out ok or should I just chuck that idea and go for a real pumpkin cheesecake recipe?
canned pumpkin needs to be cooked?

  • Question:-Turkey Recipes?
I am beginning to get my Thanksgiving Dinner menu planned for this year, and I was wondering if anyone had a good Turkey recipe... I generally just use water and butter with mine... Someone told me to Roast it in 7UP instead of water.... Do any of you have a Unique Great tasting recipe you would like to share?

Answer:-To help make the skin a rich, golden brown, I rub the turkey skin w/ soy sauce and little canola oil before placing it in a roasting pan.

I baste the turkey w/ turkey or chicken stock. Then I like to use a little bit apple juice/cider to baste the turkey during the last half hour of roasting. The sugar in the apple juice/cider caramelizes so the skin browns & crisps even more.

My mother in law recommends laying thick strips of baking across the turkey breast. As the bacon melts, it bastes and flavors the turkey. Remove the bacon once it has cooked so it doesn't burn & to allow the turkey skin to brown.
  • Question:-Turkey recipes?
Ok my mom is injured and i want her thanks giving to be delicious.please give me some turkey tricks and tricks to the flavor of the basting and stuffing and tenderness and juiciness??

Answer:-Hint 1: if this is your first time baking a turkey, make it a smallish one (10-14 pounds, not 20 pounds). (Of course, if you haven't bought your bird yet, it's a bit late...)

Hint 2: Use a baking bag. Yes, it seems silly to put a plastic bag in the oven, but it really does work. (Make sure it's an actual baking bag, not some random plastic bag you found in the kitchen.)

Hint 3: After sprinkling seasoned salt (or just salt & pepper) *lightly* all over the turkey (inside & out), cover the entire breast with bacon slices. Put it in the bag and into your roasting pan, and roast as directed (i.e. find the little timing chart on the turkey's wrapper, because ain't none us ever gonna remember those guidelines from one year to the next).

Hint 4: Make the stuffing separately. It can probably share oven space with the green bean casserole, after the turkey is cooked and is resting.
  • Question:-turkey recipes?
Can I use aluminium foil to bake a turkey? So when it is cooked I can take it off to leave the turkey skin crispy and roasted?

Answer:-Yeah, you can. It'd probably be moister that way. Personally I use oven bags. It still browns but the inside is moister. I also cover it with kosher salt before hand for a better flavor. Let your meat set for about 10 mins. after done before cutting it as that gives it a chance to redistribute the juices making it moister as well. Btw this may seem a given but just in case make sure it's in a sturdy pot. Alot of times those disposeable ones break & you have a mess, not to mention possible burns.
  • Question:-Where can I find great turkey recipes?
Hi everyone, I need to find some turkey recipes since I'm a teen who will be helping my family make the turkey this year.^^

Thank you very much for reading and happy holidays!

Answer:-Go to google and search. But you could always go to my favorite website. www.allrecipes.com
  • Question:-Does anyone have any favorite ground turkey recipes they could share?
I just recently started trying more recipes using ground turkey, and I've really come to like it. Would anyone like to share ground turkey recipes that they love? I have already gone to the recipe websites, but I was hoping for other people's tried and true experiences. Thanks in advance.

Answer:-I have found that it makes a lean and tender substitutue for ground pork! So I end up using it in meat balls, egg rolls etc. Here is a "Chinese Spaghetti" recipe for you to try.

    1 lb ground turkey
    2 Tbsp soy sauce
    1/2 tsp salt
    1/2 tsp 5-spice powder
    4-6 cloves garlic, minced
1 Tbsp minced fresh ginger root

Mix turkey with soy sauce, salt, 5-spice powder, garlic, and ginger root. Let this sit as long as possible in the fridge--it's fantastic if I do it in the morning but 1/2 hour will do.

    Sauce
    3 Tbsp oyster flavored sauce
    2 Tbsp soy sauce
    1 Tbsp dry wine
    1 Tbsp sesame oil

Mix together in small bowl and set aside.

2 stalks celery, julienned into 2-3 inch strips
2 large carrots, Julienned into 2-3 inch strips
1 large onion, peeled, cut in half, thinly sliced into c shaped arches (onion rings cut in half)
1 lb "french style" green beans
1 lb dried spaghetti, broken into 4-6 inch pieces, cooked according to package directions, then drained and rinsed with cold water.

Spray large non-stick skillet with cooking spray and heat until very, hot. Add carrots and cook 1 1/2 min. Add celery to pan and cook 2 min. longer. Add meat to pan breaking it up into small pieces and cook until all pinkness is gone and it is broken up into small pieces. Add green beans to pan and cook until they are heated through. Add onions, spaghetti, and sauce and gently toss until well heated. Serve, will serve a family of 6 if there's little kids or 4 grown men!

    Good Luck!
  • Question:-Do you have any special turkey recipes that use for Christmas?
I'm in charge of Christmas dinner this year!!! I'm the youngest but I'm the best at cooking :P

We're having turkey, but I've never cooked one before. Do you have any recipes (rough measurements are okay if you haven't written the recipe down) that you use? I'm cooking for 5 people by the way.

Answer:-Get yourself a 10-15 lb. turkey, some vinegar, honey, sea salt, chese cloth and a good store bought rub.(or make your own). Then go to food network and search turkey brine. They will tell you how to brine the turkey overnight.

    step 2.

Pull out your smoker and make sure you have two large bags of hickory chunks from walmart.

after turkey is brined pull it out drain and pat with paper towl. Then add rub(make sure you add your rub underneath the skin too!) and set in frige overnight.

Cooking day: Put enough wood in your smoker to get it around 225 and let it burn for about 20 min. Wrap turkey in chese cloth then place on the smoker. Cooks 8-14 hrs(sometimes more) depending on weight of turkey and altitude. Now if a 10 lb. turkey and in lets say las vegas you would wanna take the cloth off at about hr 6-7 and let it finish without it on. You can also smoke it for that lenght of time and pull it out and finish it in your oven. Make sure you have a thermometer so you can check the temp. You want it any where between 160-165.

*If you dont have a smoker get wood chips instead of chunks, then place some charcoal in your grill and put chunks, placed in foil with holes on top of foil, on charcoal. Once wood is smoking good place your bottom rack to its lowest level in oven and place them on there. Will smoke house up a tad bit but you can open kitchen window or door. You only need to do it for about 1.5 hrs

** Or you can just use the rub and chese cloth in your oven, but you will still need to remove the cheese cloth so the skin will brown.

*** If you smoke the turkey don't put stuffing in it as it will take too long for the turkey cavity to get up to temperature. Im sure you don't want to get folks sick!
  • Question:-18lb turkey, all recipes say 10-14lb, can I still use the recipe?
I have an 18lb turkey and I would like to find a good recipe online. My problem is that the biggest turkey recipe I can find is for a 14lb turkey. Can I just extend the baketime and I will be fine? I don't plan on going off of the oven temperature on the recipe, I will read the instructions on the turkey. Thanks for your help!

    Answer:-hi,

It takes about 15 minutes per pound to bake a turkey. So your turkey will take about 4 and a half hours to cook. Of course, you'll can always stick one of those thermometors in and it will tell you when its done. I don't know what your other ingredients are, but just increase them a little bit, and you'll be fine.
  • Question:-Turkey recipes for smaller conventional oven?
I am looking for a really good recipe that entails smoked turkey, or a flavored smoked turkey that you can make in a smaller oven. I only have this oven, so it makes it harder to cook in. I am looking for a tender, juicy turkey. I can make it in a bag, but need a really good recipe, that isn't spicy. Any suggestions that you can give, would be great. Only serious replies. Thanks to all those chefs out there!

Answer:-For the smoked part, look at your grocery store for liquid smoke - that will give you the flavor of smoking without having to spend hours to do it. You can also check with a place that sells grilling supplies for a cast iron box (you buy wood chips, soak them in water, then put them in the box and it will give a smoky flavor). You're going to get a more tender turkey with a bag so liquid smoke might be a better option.

Here's a recipe with a bag and liquid smoke:

  • Question:-What are some simple ground turkey recipes over pasta?
Just want some simple quick and easy ground turkey recipes. Thanks!

Answer:-My husband made ground turkey meatballs over marinara sauce and pasta for dinner last night. It was really good.

Other than that, you can brown it, add some spinach and mushrooms with garlic, parmesan cheese and servce that over pasta.
  • Question:-need some good recipes for cooking turkey for thanksgiving?
also if you have a good turkey recipe where i have to marinade it for a day or whatever would be great...
    ty jason ill try that.

Answer:-I'm going to use the Tony Cachere injectable marinade and slow roast it (then again it will only take about 3 hours as it's a small turkey about the size of a large roasting chicken) in a low oven. If you bird is about 25+ pounds you can put it in a cold oven and turn it to about 275-300 degrees and let it slowly cook and then pull it out about 1:30 or so and it will be tender and juicy. I've never had this technique fail as I learned it from a friend.

Wrap turkey in chese cloth then place on the smoker. live oak

  • Question:-What are the golden cocoons falling off my Live Oak trees in New Orleans since August?
My yard, car, driveway and deck are covered in a gold colored cocoon that seems to hang on the bottom of the leaves of my Live Oak Trees. They are everywhere, like little cotton balls and there seems to be no end in sight for their presence in my yard, under the hood of my car, inside the house, etc... What are they? I have never seen this before in 35 years of living in New Orleans. Does it have anything to do with global warming?

Answer:-Not sure if it has anything to do with global warming, unless that's changing the environment where you live so that pests have a greater chance of survival. Without seeing the items it's hard to guess - take some (in a plastic baggie) to your local Master Gardener or Botanic Garden place (you can find them on the web) and they should be able to ID it for you.
  • Question:-How long does it take for a Live Oak Tree to reach full maturity?
I have to do a paper on plants and I picked Live Oak. I am stuck because I need to know how long it takes a Live Oak Tree to reach full maturity.

    Answer:-http://www.nativetreesociety.org/projects/liveoak_project/live_oak_growth_rates.htm
  • Question:-Can a live oak in residential be trimmed if it encroaches neighbors yard?
Can a live oak tree with branches hanging 25 feet over neighbor's wall and swimming pool be trimmed by that neighbor. Also is there a protected species ordinance or law concerning live oaks in incorporated areas of Los Angeles County

Answer:-The neighbor can trim straight up the property line if he wants to.
  • Question:-How often should I plant a 4" caliper live oak tree during the winter months?
I just purchased and transplanted this live oak tree to my front yard, and I need to know how often I should water in the winter, and summer.

Answer:-You don't say where you live. But generally speaking such a plant would need very little water in the winter as it is not the growing season just as long as the ground is moist that is sufficient. In the spring when the new leaves appear you could put a little fertilizer near it but just a little and not right against the plant , and as the season warms up keep the soil moist but not saturated , some mulch around the tree will help to prevent the ground from drying out. It may also be necessary to put some sort of guard around the tree to prevent rabbits eating it.
  • Question:-How close can I plant a Live Oak tree to my house?
I want to plant a Live Oak tree near my house for shade. I am concerned about the roots growing under the foundation of my house.

Answer:-Live oaks are very slow-growing and will not produce substantial shade for many years. If you decide to plant one, you should plant it at least 15 ft away from any structure, not because of root invasion, but because of the size of the eventual canopy. These trees need to be planted away from other vegetation (lawns, ivy) because they will develop crown rot if exposed to regular watering. In their native habitat, they rely only on winter and spring rainfall (20 in/year)
  • Question:-how to get rid of live oak shoots?
I live in Florida. The neighbour has a live oak tree. My garden is full of shoots. Are they coming from the roots or seeds? The ground is full of roots. I have tried weedkiller but they just sprout again. Any suggestions about how to get rid of them or what to plant in the area. I gave up trying to dig the roots out. This garden has been negected for years, so I am trying to get it into shape.

Answer:-Be aware that if you kill the tree by using a systemic herbicide or chopping off roots, you could be sued for the replacement value, which could be thousands for a mature tree.

You could use raised beds in wood frames, but that is expensive. Why not a ground cover of gravel or bark and a bench? A few flowers in large pots.
  • Question:-What could be causing my Live Oak tree to turn brown?
I just moved into a new home in Texas, the builders planted a Live Oak in the front yard. Some of the leaves are turning brown. I have watered the tree every 3 or 4 days. Any ideas what is causing the tree to have brown leaves? Our soil is very poor clay and I have not fertilized it in the 30 days I have lived in the newly constructed house.

Answer:-I have had 5 yrs in the Custom landscape industry and have a couple of recommedations. One. If there is a ring of mulch around the tree anything higher than ground level could be causing difficulties in the production of photosynthesis. It kind of causes the tree to "suffocate" and hinders the xylem-phloem circulation. Two. you may have to dig down to the root ball and see if the "genisuses" that installed the tree remembered to cut away the burlap wrap. And Three. Look around your near by neighbors and see if their trees are in the same predicament (look on and under the leaves for possible spots) could be a fungal/bacteria issues, both of which are easy enough to solve with a tree spray found at most local nurseries. Good luck
  • Question:-Can I move a 6' Live Oak without killing it?
I need to move a small live oak because it's in the place where I'm building a deck. Temperature is averaging about 55 deg right now. Do I need to wait for spring?

Answer:-No, you can move it now. Get as much of the dirt around the root ball as possible, add fertilizer to the soil and water well after moving and it should be fine.
  • Question:-Why does Spanish moss only grow on hardwoods like live oak?
Why doesn't it grow as often on pine trees, and never on trees like palm? what features of the live oak make it a good candidate for Spanish moss growth?

Answer:-You have made a very interesting observation that I had never thought of. First, Spanish Moss is the common name for Tillandsia usneoides, a member of the pineapple family. It is not actually a moss but is a flowering plant. Once a year you can find a tiny red flower on the end of the strands. It is an "airplant" and grows on trees as a epiphyte, not a parasite. It just uses the tree for a place to hang and grow and doesn't harm the tree.

I found an article in the American Journal of Botany from 1977 which explains that certain trees like live oak and cypress have an abundance of minerals which they leach out through their leaves. The pine trees do not do this. Studies of Spanish Moss in oak groves and pine forests show that the Spanish Moss is more abundant and has a higher mineral content than the Spanish Moss in the pine forest.

Thank you for a very interesting question.

  • Question:-what are these fuzzy things on my live oak tree?
I have these creame colored fuzz balls on the leaves of my live oak tree. I cut one open and it looked like seeds inside them.

Answer:-They are possibly an oak gall. It is caused by an insect. Usually a type of wasp. Look at the web site below. They don't seem to affect tree health so don't worry about them.
