Answer:-Kelly bailing out is not the reason Cincinnati lost.They were exposed as the very average team that they are.This is the second BCS bowl game in a row that they have lost and not looked like the contender they want to be.Simply put,no matter who would have coached them last night - they are not among the top teams in college football.
Games like this are the reason that the mid-majors and second tier conference teams(and yes,that includes TCU, Boise and Cincinnati)really need to play some better competition during their season if they are to be taken seriously when talk of national championships come up.Neither TCU or Boise State would have fared any better against the Florida team that played last night.

i bought real maple syrup, i have every ingredient known to man for baking needs and i bought a 5lb. bag of sweet potatoes. i bought the maple syrup because i remember making this 7 yrs ago and it was in the recipe. but i forgot to research a recipe before going grocery shopping today! the store is a mad house btw and i was under pressure to try to remember what i put in it. ooo i also bought heavy cream....is that in the recipe aswell?
Answer:-If it were me, I'd prepare the potatoes, put in about a cup of maple syrup, 1/4 cup of butter, a cup of heavy cream, and a good tsp of salt, a tbsp cinnamon and a tbsp good vanilla extract. I'd mash it all up together, put it in a baking pan, and save until you're ready to cook it. I'd reheat it at 350 degrees for 45 min, then cover with marshmallows and give it an additional 10 min at 400 degrees.
Kraft has a great recipe on their site, if you can find it--with cream cheese or neufachel and pecans on top.

Answer:-umm this one is with substitute sugar
INGREDIENTS:
3 lbs sweet potatoes or yams (try to find ones that are about the same size)
1½ cups pecan pieces
2 teaspoons cinnamon
½ teaspoon nutmeg
1 teaspoon salt
¼ teaspoon pepper
5 Tablespoons butter
1 egg
Sugar substitute
PREPARATION:
1. Poke the sweet potatoes/yams several times with a sharp knife and roast at 400 F. until soft - about 45-60 minutes depending upon the size.
2. Make the topping - pulse 1 cup of the pecans in food processor or blender until it is ground into a meal.
Add about 1/4 cup worth sugar substitute, 1 teaspoon cinnamon, a pinch of salt, and 2 Tablespoons of the butter and process until blended. Mix the rest of the pecan pieces in by hand.
3. Let the sweet potatoes cool for 10-15 minutes. Split them and remove the pulp. Put them into the food processor or blender (no need to wash between topping and sweet potatoes) and process with the rest of the butter (3 Tablespoons). Mashing with a potato masher is also fine, but the texture will be somewhat smoother if you blend/process. Add the rest of the seasonings - (1 teaspoon cinnamon, the nutmeg, salt, and black pepper). The amount of sweetener you add will be up to your taste and the sweetness of the yams. When the seasonings are to your taste, and the egg and blend.
4. Put sweet potato in buttered baking dish and sprinkle pecan topping over the top. Bake at 375 F. until the topping is browned.

1/2 tsp grated orange peel
1/2 cup orange juice
2 tbsp brown sugar
1/4 tsp cinnamon
2 dash angostura bitters

Boil potatoes until tender. Remove skins. Mash pulp with a potato
masher or electric mixer. Add remaining ingredients and whip until
fluffy. Pace in a 1 quart ungreased casserole. Cover and bake at 350

Answer:-Though I don't have an exact recipe for you, I would suggest baking the sweet potatoes, rather than boiling them. Their flavor is much more rich when baked.
Or, you could do as I have done before, and it tastes dynamite!! Make candied sweet potatoes, and once they are fully cooked, mash them (or use the blender/mixer) and pour into pie crusts and bake.
Here's a recipe for those, adjust it as you may need for a smaller batch.

DIRECTIONS
1. Prepare the sweet potatoes: In a small bowl, combine cumin, salt, and pepper. Set aside. Preheat oven to 400 degrees F. Peel potatoes, cut each in half lengthwise, and cut each half into 6 wedges. In a large bowl, combine the cut potatoes, oil, and spice mixture. Toss until potatoes are evenly coated.

SWEET POTATO PUDDING
13 1/2 oz sweet potatoes, peeled, cooked and mashed
1 cup orange juice
3/4 cup sugar
1/2 cup butter, melted
6 egg yolks, beaten
2 teaspoons preserved ginger in syrup, finely chopped
1-2 teaspoons lemon zest, finely grated
1/4 teaspoon cinnamon or nutmeg
2 egg whites, stiffly beaten
Preheat the oven to 180 degrees celsius.
Combine all the ingredients except fo the egg whites in a bowl and beat together well.
Fold in the egg whites and bake in a greased pudding dish for about 1 hour.
Preserved ginger in syrup is available in jars from delicatessens.

Years ago I had a recipe for pecan pie with pecans throughout the pie NOT just on top. I've lost the recipe & all my older relatives have passed on. All I remember is that it was a basic recipe with bourbon & cream. Please help.
Thanks to everyone who has answered so far, but this recipe calls for cream IN the filling. The nuts are toasted & the filling is poured over them so they don't float to the top. It (the recipe) was also featured in the NY Daily news many, many years ago but they don't archive that far back.
Answer:-PECAN PIE WITH CREAM AND PECANS
Ingredients:
1 prepared pie shell, 9-inch, baked
1 3/4 cups granulated sugar, divided
1 cup heavy/whipping cream
4 eggs, separated
1 cup pecans, coarsely chopped, toasted*
Preparation:
In a heavy saucepan, cook 1 cup of the sugar and the cream for 12 minutes, stirring occasionally. Beat egg yolks. Stir about 1/4 of the hot mixture into yolks, then return yolk mixture to pan and continue cooking and stirring another 2 minutes, until thickened and smooth. Remove from heat. Add pecans and pour into pie shell. Make meringue by beating egg whites until stiff. Add remaining 1/2 cup of sugar gradually, beating until glossy. Cover pie with meringue and bake at 325 degrees for about 20 minutes. Cool thoroughly before slicing. This pie is best served the same day. Store leftovers in the refrigerator.

4 to 5 tablespoons cold water
3 eggs
1 cup corn syrup
2/3 cup sugar
1/3 cup margarine or butter, melted
1 tablespoon all-purpose flour
2 tablespoons bourbon whiskey
1 teaspoon vanilla
1-1/2 cups pecan halves
Whipped cream
Directions
1. For pastry, in a bowl stir together the 1-1/4 cups flour and salt. Cut in shortening until pieces are the size of small peas. Stir in finely chopped pecans. Sprinkle 1 tablespoon of the water over part of the mixture; gently toss with a fork. Push to side of bowl. Repeat until all is moistened. Form dough into a ball.
2. On a lightly floured surface, flatten dough with your hands. Roll dough from center to edges, forming a circle about 12 inches in diameter. Wrap pastry around a rolling pin. Unroll pastry into a 9-inch pie plate. Ease pastry into pie plate, being careful not to stretch pastry. Trim pastry to 1/2 inch beyond edge of pie plate; fold under extra pastry. Make a fluted edge. Do not prick pastry.
3. For filling, in a mixing bowl beat eggs lightly with a rotary beater until combined. Stir in corn syrup, sugar, margarine, the 1 tablespoon flour, the bourbon, and vanilla. Mix well. Stir in the pecan halves.
4. Place pastry-lined pie plate on the oven rack. Pour the filling into the pastry-lined pie plate. Cover edge of pie with foil. Bake in a 350 degree oven for 25 minutes. Remove foil; bake for 20 to 25 minutes more or until a knife inserted near the center comes out clean. Cool.
5. Serve with whipped cream. Cover and chill to store. Makes 8 servings.

1 cup light-colored corn syrup
2/3 cup sugar
1/3 cup butter, melted

1. Preheat oven to 375 degree F. Prepare and roll out Lard Crust Pastry. Line a 9-inch pie plate with the pastry. Trim; crimp edge as desired.
2. For filling, in a mixing bowl combine eggs, corn syrup, sugar, butter, and salt. Mix well. Stir in the pecan halves.*
3. Place the pastry-lined pie plate on the oven rack. Carefully pour the filling into the pastry shell.

Lard-Crust Pastry: In a medium bowl stir together 1 1/4 cups flour and 1/2 teaspoon salt. Using a pastry blender, cut in 1/3 cup lard until pieces are pea-size. Sprinkle 1 tablespoon of cold water over part of the flour mixture; gently toss with a fork. Push moistened dough to the side of the bowl. Repeat moistening flour mixture, using 1 tablespoon of the water at a time, until all the flour mixture is moistened. (You will need about 3 to 4 tablespoons of water.) Form dough into a ball. Answer:-I like to make pecan pie without corn syrup, because I am allergic to it, this is a recipe I found substituting caramel sauce for the corn syrup:
Caramel Pecan Pie
• 1 9" unbaked pie shell
• 3 eggs
• 2/3 c sugar
• 1/4 c butter, melted
• 1 12-oz. Jar Caramel Topping/Sauce
• 1 1/2 c pecan halves
Directions
In mixing bowl, beat eggs slightly with fork. Add sugar and stir until dissolved.
Stir in Caramel Topping/Sauce and butter; mix well.
Stir in pecan halves.
Pour filling into pie shell. Bake in 350ºF oven for 45 minutes or until knife inserted into the center, comes out clean.
Cool thoroughly on rack before serving.

Does anyone have a homemade family pecan pie recipe.
Every pecan pie I buy has no flavor or has to much sugar.
Everytime I buy a pie at the store it undercooked or burnt.
The last great piece of pie I had was at a Luby's in central

3 med. eggs, beaten
1 c. light/dark corn syrup
1/2 c. sugar
1/8 tsp. salt
1 tsp. vanilla
1/4 c. butter, melted

Beat eggs. Add syrup, sugar, salt, vanilla and melted butter. Mix well. Place pecans in the bottom of pie shell. Add filling and bake at 350 F. for 50-60 minutes. Pecans will rise to the top and form a custard layer.

Custard part of pie is very creamy, not at all sticky like the old fashioned Karo and sugar mixtures sometimes are. I thought it was best Pecan Pie I'd ever made, but my recipe disappeared. Help please.

Answer:-Preheat oven to *350 and place oven rack in the center of the oven. Butter (or spray with a non stick spray) an 8 inch (20 cm) spring form pan.
For Crust: In a medium sized bowl combine the graham cracker crumbs, finely ground ginger snap cookies, sugar, and melted butter. Press the mixture onto the bottom of the prepared spring form pan. Cover and refrigerate while you make the cheesecake filling.
For Cheesecake: In a separate bowl, stir to combine the sugar, cinnamon, ginger, cloves, nutmeg, and salt.
In the bowl of your electric mixer (or with a hand mixer), on low speed, beat the cream cheese until smooth (about 2 minutes). Gradually add the sugar mixture and beat until creamy and smooth (1 to 2 minutes). Add the eggs, one at a time, beating well (about 30 seconds) after each addition. Scrape down the sides of the bowl and beat in the vanilla extract and pumpkin puree.
Pour the filling over the chilled ginger crust and place the spring form pan on a baking sheet to catch any drips. Place a cake pan, filled halfway with hot water, on the bottom shelf of your oven to moisten the air. Bake the cheesecake for 30 minutes and then reduce the oven temperature to 325 degrees C (165 degrees C) and continue to bake the cheesecake for another 10 - 20 minutes, or until the edges of the cheesecake are puffed but the center is still wet and jiggles when you gently shake the pan.
Meanwhile whisk together the sour cream, vanilla extract and sugar. Pour the sour cream mixture over the top of the baked cheesecake and rotate the pan slightly to evenly distribute the topping. Return the cheesecake to the oven and bake about 8 minutes to set the topping. Remove from oven and place on a wire rack to cool. Loosen the cake from the pan by running a sharp knife around the inside edge (this will help prevent the cake from cracking). Then place a piece of aluminum foil over the top of the pan so the cheesecake will cool slowly. When completely cooled, cover and refrigerate at least eight hours, preferably overnight, before serving.

Answer:-Freezing cheesecake changes the texture in what I view to be an unpleasant way.

What I'd suggest doing is pre-heating the oven to bake it 2.5 hours before you leave, cooking it for the 40-45 minutes needed at 350, cooling it in the oven for half an hour, cooling it on a wire rack for one hour and then putting it on your lap still warm to cool during the three hour ride with aluminum foil covering it and a few holes poked in the foil to allow steam to escape so it doesn't condense and drip on to your lovely pumpkin cheesecake. Pumpkin cheesecake is on a very short list of cheesecakes that can go straight from counter cooling in to your tummy tum and still be yummy. It'll be a little bit better if you refrigerate it for 2 hours after arriving. But it's not necessary, and won't make any difference at all if you do what I'm about to tell you because every one's head will explode from the goodness.
Top it with dulcé de leche (made in advance) and ground cinnamon pecans or candied pralines. Dulcé deleche is the world's greatest caramel ever - made by boiling a can of condensed sweetened milk for 2 hours, making sure to keep the water level above the can for even boiling. Then let the can cool, open it, and pour on top of your pie, followed by said nuts.
This is the way to make pumpkin cheesecake. I swear to you. Even people who hate pumpkin, caramel,cheesecake and nuts like this stuff. And make sure you spice the heck out of it. Pumpkin Cheesecake Pie
2 Packages (8 oz. each) cream cheese,soften
2/3 cup regular white sugar
2 tps. pumpkin pie spice *
2 eggs
1 can (15 oz.) pumpkin (regular not pie mix)
1 extra serving graham crumb pie crust (10 inch size)
In a large beat the cream cheese until fluffly. Add the sugar and spice. Combine well. Add eggs in one at a time. Stir in pumpkin. Pour mixture into crust. Bake in a 350 degree preheated oven for 35 to 40 minutes or until the middle is set.
Cool for 1 hour and refrigate for 3 hours. Cut and add Cool Whip on top when serving.
* Substitute 1 tps. ground cinnamon,1/2 tps. ground ginger and 1/4 tps. ground cloves for the pumpkin pie spice.

i bought real maple syrup, i have every ingredient known to man for baking needs and i bought a 5lb. bag of sweet potatoes. i bought the maple syrup because i remember making this 7 yrs ago and it was in the recipe. but i forgot to research a recipe before going grocery shopping today! the store is a mad house btw and i was under pressure to try to remember what i put in it. ooo i also bought heavy cream....is that in the recipe aswell?
Answer:-If it were me, I'd prepare the potatoes, put in about a cup of maple syrup, 1/4 cup of butter, a cup of heavy cream, and a good tsp of salt, a tbsp cinnamon and a tbsp good vanilla extract. I'd mash it all up together, put it in a baking pan, and save until you're ready to cook it. I'd reheat it at 350 degrees for 45 min, then cover with marshmallows and give it an additional 10 min at 400 degrees.

INGREDIENTS:
3 lbs sweet potatoes or yams (try to find ones that are about the same size)
1½ cups pecan pieces
2 teaspoons cinnamon
½ teaspoon nutmeg
1 teaspoon salt
¼ teaspoon pepper
5 Tablespoons butter
1 egg
Sugar substitute
PREPARATION:
1. Poke the sweet potatoes/yams several times with a sharp knife and roast at 400 F. until soft - about 45-60 minutes depending upon the size.
2. Make the topping - pulse 1 cup of the pecans in food processor or blender until it is ground into a meal.
Add about 1/4 cup worth sugar substitute, 1 teaspoon cinnamon, a pinch of salt, and 2 Tablespoons of the butter and process until blended. Mix the rest of the pecan pieces in by hand.
3. Let the sweet potatoes cool for 10-15 minutes. Split them and remove the pulp. Put them into the food processor or blender (no need to wash between topping and sweet potatoes) and process with the rest of the butter (3 Tablespoons). Mashing with a potato masher is also fine, but the texture will be somewhat smoother if you blend/process. Add the rest of the seasonings - (1 teaspoon cinnamon, the nutmeg, salt, and black pepper). The amount of sweetener you add will be up to your taste and the sweetness of the yams. When the seasonings are to your taste, and the egg and blend.
4. Put sweet potato in buttered baking dish and sprinkle pecan topping over the top. Bake at 375 F. until the topping is browned.

Answer:-Though I don't have an exact recipe for you, I would suggest baking the sweet potatoes, rather than boiling them. Their flavor is much more rich when baked.
Or, you could do as I have done before, and it tastes dynamite!! Make candied sweet potatoes, and once they are fully cooked, mash them (or use the blender/mixer) and pour into pie crusts and bake.

SWEET POTATO PUDDING
13 1/2 oz sweet potatoes, peeled, cooked and mashed
1 cup orange juice
3/4 cup sugar
1/2 cup butter, melted
6 egg yolks, beaten
2 teaspoons preserved ginger in syrup, finely chopped
1-2 teaspoons lemon zest, finely grated
1/4 teaspoon cinnamon or nutmeg
2 egg whites, stiffly beaten
Preheat the oven to 180 degrees celsius.
Combine all the ingredients except fo the egg whites in a bowl and beat together well.
Fold in the egg whites and bake in a greased pudding dish for about 1 hour.
Preserved ginger in syrup is available in jars from delicatessens.

Years ago I had a recipe for pecan pie with pecans throughout the pie NOT just on top. I've lost the recipe & all my older relatives have passed on. All I remember is that it was a basic recipe with bourbon & cream. Please help.
Thanks to everyone who has answered so far, but this recipe calls for cream IN the filling. The nuts are toasted & the filling is poured over them so they don't float to the top. It (the recipe) was also featured in the NY Daily news many, many years ago but they don't archive that far back.

1 prepared pie shell, 9-inch, baked
1 3/4 cups granulated sugar, divided
1 cup heavy/whipping cream
4 eggs, separated
1 cup pecans, coarsely chopped, toasted*

Add pecans and pour into pie shell. Make meringue by beating egg whites until stiff. Add remaining 1/2 cup of sugar gradually, beating until glossy. Cover pie with meringue and bake at 325 degrees for about 20 minutes. Cool thoroughly before slicing. This pie is best served the same day. Store leftovers in the refrigerator.

Sprinkle 1 tablespoon of the water over part of the mixture; gently toss with a fork. Push to side of bowl. Repeat until all is moistened. Form dough into a ball.
2. On a lightly floured surface, flatten dough with your hands. Roll dough from center to edges, forming a circle about 12 inches in diameter. Wrap pastry around a rolling pin. Unroll pastry into a 9-inch pie plate. Ease pastry into pie plate, being careful not to stretch pastry. Trim pastry to 1/2 inch beyond edge of pie plate; fold under extra pastry. Make a fluted edge. • 1 12-oz. Jar Caramel Topping/Sauce
• 1 1/2 c pecan halves
Directions

Years ago I had a recipe for pecan pie with pecans throughout the pie NOT just on top. I've lost the recipe & all my older relatives have passed on. All I remember is that it was a basic recipe with bourbon & cream. Please help.
Thanks to everyone who has answered so far, but this recipe calls for cream IN the filling. The nuts are toasted & the filling is poured over them so they don't float to the top. It (the recipe) was also featured in the NY Daily news many, many years ago but they don't archive that far back.
Answer:-PECAN PIE WITH CREAM AND PECANS
Ingredients:
1 prepared pie shell, 9-inch, baked
1 3/4 cups granulated sugar, divided
1 cup heavy/whipping cream
4 eggs, separated
1 cup pecans, coarsely chopped, toasted*
Preparation:
In a heavy saucepan, cook 1 cup of the sugar and the cream for 12 minutes, stirring occasionally. Beat egg yolks. Stir about 1/4 of the hot mixture into yolks, then return yolk mixture to pan and continue cooking and stirring another 2 minutes, until thickened and smooth. Remove from heat. Add pecans and pour into pie shell. Make meringue by beating egg whites until stiff. Add remaining 1/2 cup of sugar gradually, beating until glossy. Cover pie with meringue and bake at 325 degrees for about 20 minutes. Cool thoroughly before slicing. This pie is best served the same day. Store leftovers in the refrigerator.

i bought real maple syrup, i have every ingredient known to man for baking needs and i bought a 5lb. bag of sweet potatoes. i bought the maple syrup because i remember making this 7 yrs ago and it was in the recipe. but i forgot to research a recipe before going grocery shopping today! the store is a mad house btw and i was under pressure to try to remember what i put in it. ooo i also bought heavy cream....is that in the recipe aswell?
Answer:-If it were me, I'd prepare the potatoes, put in about a cup of maple syrup, 1/4 cup of butter, a cup of heavy cream, and a good tsp of salt, a tbsp cinnamon and a tbsp good vanilla extract. I'd mash it all up together, put it in a baking pan, and save until you're ready to cook it. I'd reheat it at 350 degrees for 45 min, then cover with marshmallows and give it an additional 10 min at 400 degrees.
Kraft has a great recipe on their site, if you can find it--with cream cheese or neufachel and pecans on top.

Answer:-umm this one is with substitute sugar
INGREDIENTS:
3 lbs sweet potatoes or yams (try to find ones that are about the same size)
1½ cups pecan pieces
2 teaspoons cinnamon
½ teaspoon nutmeg
1 teaspoon salt
¼ teaspoon pepper
5 Tablespoons butter
1 egg
Sugar substitute
PREPARATION:
1. Poke the sweet potatoes/yams several times with a sharp knife and roast at 400 F. until soft - about 45-60 minutes depending upon the size.
2. Make the topping - pulse 1 cup of the pecans in food processor or blender until it is ground into a meal.
Add about 1/4 cup worth sugar substitute, 1 teaspoon cinnamon, a pinch of salt, and 2 Tablespoons of the butter and process until blended. Mix the rest of the pecan pieces in by hand.
3. Let the sweet potatoes cool for 10-15 minutes. Split them and remove the pulp. Put them into the food processor or blender (no need to wash between topping and sweet potatoes) and process with the rest of the butter (3 Tablespoons). Mashing with a potato masher is also fine, but the texture will be somewhat smoother if you blend/process. Add the rest of the seasonings - (1 teaspoon cinnamon, the nutmeg, salt, and black pepper). The amount of sweetener you add will be up to your taste and the sweetness of the yams. When the seasonings are to your taste, and the egg and blend.
4. Put sweet potato in buttered baking dish and sprinkle pecan topping over the top. Bake at 375 F. until the topping is browned.

Answer:-Though I don't have an exact recipe for you, I would suggest baking the sweet potatoes, rather than boiling them. Their flavor is much more rich when baked.
Or, you could do as I have done before, and it tastes dynamite!! Make candied sweet potatoes, and once they are fully cooked, mash them (or use the blender/mixer) and pour into pie crusts and bake.
Here's a recipe for those, adjust it as you may need for a smaller batch.

Answer:-I never used purple sweet potatoes but i grew purple beans and when cooked they turned green. Iwas really diappointed! I dont know if the potatoes do the same. Answer:-I made sweet potato hash browns and they were awesome, I shredded the potatoes like regular potatoes. I put some olive oil and butter in my pan, so the butter would not burn so fast. I added the sweet potatoes, a little salt, pepper, cayenne and some brown sugar. Let them cook till brown on one side, then flip. They get real brown and the crust is kinda chewy. My boyfriend loved them and he isn'at crazy about sweet potatoes. You can also make sweet potato fries. SWEET POTATO PUDDING
13 1/2 oz sweet potatoes, peeled, cooked and mashed
1 cup orange juice
3/4 cup sugar
1/2 cup butter, melted
6 egg yolks, beaten
2 teaspoons preserved ginger in syrup, finely chopped
1-2 teaspoons lemon zest, finely grated
1/4 teaspoon cinnamon or nutmeg
2 egg whites, stiffly beaten
Preheat the oven to 180 degrees celsius.
Combine all the ingredients except fo the egg whites in a bowl and beat together well.
Fold in the egg whites and bake in a greased pudding dish for about 1 hour.
Preserved ginger in syrup is available in jars from delicatessens.

Years ago I had a recipe for pecan pie with pecans throughout the pie NOT just on top. I've lost the recipe & all my older relatives have passed on. All I remember is that it was a basic recipe with bourbon & cream. Please help.
Thanks to everyone who has answered so far, but this recipe calls for cream IN the filling. The nuts are toasted & the filling is poured over them so they don't float to the top. It (the recipe) was also featured in the NY Daily news many, many years ago but they don't archive that far back.
Answer:-PECAN PIE WITH CREAM AND PECANS
Ingredients:
1 prepared pie shell, 9-inch, baked
1 3/4 cups granulated sugar, divided
1 cup heavy/whipping cream
4 eggs, separated
1 cup pecans, coarsely chopped, toasted*
Preparation:
In a heavy saucepan, cook 1 cup of the sugar and the cream for 12 minutes, stirring occasionally. Beat egg yolks. Stir about 1/4 of the hot mixture into yolks, then return yolk mixture to pan and continue cooking and stirring another 2 minutes, until thickened and smooth. Remove from heat. Add pecans and pour into pie shell. Make meringue by beating egg whites until stiff. Add remaining 1/2 cup of sugar gradually, beating until glossy. Cover pie with meringue and bake at 325 degrees for about 20 minutes. Cool thoroughly before slicing. This pie is best served the same day. Store leftovers in the refrigerator.

Ingredients
1-1/4 cups all-purpose flour
1/4 teaspoon salt
1/3 cup shortening
1/4 cup finely chopped pecans
4 to 5 tablespoons cold water
3 eggs
1 cup corn syrup
2/3 cup sugar
1/3 cup margarine or butter, melted
1 tablespoon all-purpose flour
2 tablespoons bourbon whiskey
1 teaspoon vanilla
1-1/2 cups pecan halves
Whipped cream
Directions
1. For pastry, in a bowl stir together the 1-1/4 cups flour and salt. Cut in shortening until pieces are the size of small peas. Stir in finely chopped pecans. Sprinkle 1 tablespoon of the water over part of the mixture; gently toss with a fork. Push to side of bowl. Repeat until all is moistened. Form dough into a ball.
2. On a lightly floured surface, flatten dough with your hands. Roll dough from center to edges, forming a circle about 12 inches in diameter. Wrap pastry around a rolling pin. Unroll pastry into a 9-inch pie plate. Ease pastry into pie plate, being careful not to stretch pastry. Trim pastry to 1/2 inch beyond edge of pie plate; fold under extra pastry. Make a fluted edge. Do not prick pastry.
3. For filling, in a mixing bowl beat eggs lightly with a rotary beater until combined. Stir in corn syrup, sugar, margarine, the 1 tablespoon flour, the bourbon, and vanilla. Mix well. Stir in the pecan halves.
4. Place pastry-lined pie plate on the oven rack. Pour the filling into the pastry-lined pie plate. Cover edge of pie with foil. Bake in a 350 degree oven for 25 minutes. Remove foil; bake for 20 to 25 minutes more or until a knife inserted near the center comes out clean. Cool.
5. Serve with whipped cream. Cover and chill to store. Makes 8 servings.

1. Preheat oven to 375 degree F. Prepare and roll out Lard Crust Pastry. Line a 9-inch pie plate with the pastry. Trim; crimp edge as desired.

3. Place the pastry-lined pie plate on the oven rack. Carefully pour the filling into the pastry shell.

Lard-Crust Pastry: In a medium bowl stir together 1 1/4 cups flour and 1/2 teaspoon salt. Using a pastry blender, cut in 1/3 cup lard until pieces are pea-size. Sprinkle 1 tablespoon of cold water over part of the flour mixture; gently toss with a fork. Push moistened dough to the side of the bowl. Repeat moistening flour mixture, using 1 tablespoon of the water at a time, until all the flour mixture is moistened. (You will need about 3 to 4 tablespoons of water.) Form dough into a ball. Caramel Pecan Pie
• 1 9" unbaked pie shell
• 3 eggs
• 2/3 c sugar
• 1/4 c butter, melted
• 1 12-oz. Jar Caramel Topping/Sauce
• 1 1/2 c pecan halves
Directions
In mixing bowl, beat eggs slightly with fork. Add sugar and stir until dissolved.
Stir in Caramel Topping/Sauce and butter; mix well.
Stir in pecan halves.
Pour filling into pie shell. Bake in 350ºF oven for 45 minutes or until knife inserted into the center, comes out clean.
Cool thoroughly on rack before serving.

Every pecan pie I buy has no flavor or has to much sugar.
Everytime I buy a pie at the store it undercooked or burnt.

1/8 tsp. salt
1 tsp. vanilla

1 (3 1/2 ounce) package vanilla or butterscotch jello instant pudding mix
1 cup chopped pecans
1 cup dark karo syrup
1 cup condensed milk, not evaporated
1 egg, well beaten
-Preheat oven to 350 degrees In a large bowl stir together corn syrup and pudding mix. Gradually add condensed milk and pecans. Pour into pie shell. Bake@ 350 degrees for 1 hour.
