  • Question:-Does Patti Labelle have a Recipe for Cornbread?
    I know Patti Labelle has a few cookbooks and I have made things from her books in the past. Does anyone know if she has a recipe for cornbread? If so, can someone please post it or post a link to where I can find it? I know she has one for hush puppies but I wanted one for cornbread. Thanks in advance!

    Answer:-Beyond-Good Bacon and Buttermilk Cornbread
    Makes 12 to 16 servings.

    Ingredients:
    Start preparing this one day ahead.
    2cups buttermilk
    1 1/4cups coarse cornmeal

    8ounces bacon (about 10 slices), cut into 1/2-inch pieces
    1 cups all purpose flour
    1 1/2tablespoons baking powder
    1teaspoon salt
    1/4teaspoon baking soda
    1/2cup (packed) golden brown sugar
    3large eggs
    2tablespoons honey
    2tablespoons (1/4 stick) butter, melted
    2 1/2cups sweet corn (kernels)

    Prep:
    Stir buttermilk and cornmeal in medium bowl to blend. Cover and let stand at room temperature overnight. Preheat oven to 350°F. Cook bacon in heavy large skillet until crisp. Using slotted spoon, transfer bacon to paper towels to drain. Spoon 2 tablespoons bacon drippings into 13x9x2-inch metal baking pan. Tilt pan to coat bottom and sides of pan with bacon drippings. Place baking pan in oven until bacon drippings are hot, about 6 minutes.
    Meanwhile, sift flour, baking powder, salt and baking soda into large bowl. Stir in brown sugar. Whisk eggs, honey and melted butter in another large bowl to blend. Stir in cornmeal mixture. Add to dry ingredients. Stir just until blended. Stir in corn kernels. Transfer batter to prepared hot baking pan. Sprinkle bacon over batter, then press bacon gently to submerge slightly. Bake corn bread until tester inserted into center comes out clean and top is golden, about 45 minutes. Transfer to rack. Cool 15 minutes. Cut corn bread into squares and serve warm or at room temperature.

    In the episode before the finale, what did Patti Labelle reveal to her choir after their performance that "they didn't know before?" I watched the episode but didn't hear what she said to make them freak out.

    Answer:-A patti melt.

    There is this beautiful, gospel-like song by Patti La Belle that she dedicated to her late sister Jackie. I though it was titled after her sister, but for some reason I can't seem to find it anywhere. Can you please give me the correct title and a site where I can go and listen to it. Please and thanks a million!

  • Question:-What were the Phillies thinking with Patti Labelle singing the National Anthem last night?
    Did she not rehearse beforehand? That was so awful. She messed up so many times. So far, 2 of the performers have been awful and 2 have been ok. No clear cut fantastic performer. Hopefully tonight will be someone great!

    Answer:-I was there. She was awful. Instead of "twilight" she sang "skylight" and said "flight" instead of "fight." Many of the fans in my section thought she was awful. Do you not practice the words ahead of time? Just a thought!

    Serves 4 to 6

    Peach cobbler is a perfect way to end just about any meal, and according to Patti and Oprah, your recipe file is not complete without this great dessert!


    INGREDIENTS
    Piecrust for double crust pie
    3 pounds medium peaches, peeled, pitted, and cut into 1/4-inch slices
    2 tablespoons cornstarch
    1 cup sugar 2 teaspoons fresh lemon juice
    1/2 teaspoon ground cinnamon, plus more for the top of the crust
    4 tablespoons (1/2 stick) butter, chilled, cut into small pieces

    Preheat oven to 375 degrees. Lightly butter an 8-inch square baking dish.

    In a medium bowl, toss the peaches, cornstarch, sugar, lemon juice, and cinnamon. Fold in the butter. Spoon half of the peach mixture into a prepared dish.

    On a lightly floured work surface, roll out the smaller disk of dough into an 8-inch square about 1/8 inch thick, trimming the dough as needed. Place over the peaches in a baking dish. Top with the remaining peaches. Roll out the larger disk of dough into an 11-inch square about 1/8 inch thick, trimming as needed. Fit over top of the baking dish, letting the dough hang down on the sides of the dish. Pinch the dough firmly onto the top edge of the dish. Press the overhanging dough onto the sides of the dish. Cut a few slits in the top of the dough. Place the dish on a baking sheet to catch any drips.

    Bake until the fruit juices are bubbling and the top is golden brown, about 40 minutes. Sprinkle the top of the dough with cinnamon. Serve hot, warm, or at room temperature.

    Answer:-Ingredients
    1/4 cup margarine (non-hydrogenated, such as Smart
    Balance)
    1/3 cup unsweetened cocoa powder
    1 pint (2 cups) fat-free half-and-half
    1 tbsp. brown sugar substitute, such as Brown Sugar Twin
    1 tbsp. packed light brown sugar
    2 eggs, beaten
    3 eggs whites
    1/2 tsp. vanilla extract
    1 tsp. chocolate-flavor extract
    1/3 cup chopped toasted pecans
    1 9-inch frozen pie shell

    Directions
    Preheat oven to 350 F.

    Melt the margarine in a medium saucepan over medium-low heat. Whisk in the cocoa powder until smooth. Gradually whisk in the half-and-half, brown sugar substitute, brown sugar, eggs, and egg whites. Remove from the heat and stir in the vanilla extract, chocolate-flavor extract, and pecans.

    Place the piecrust on a baking sheet. Pour in the chocolate filling and bake until set and a toothpick inserted in the center comes out clean, 40 to 45 minutes.

    Patti's pointers
    To toast the pecans, spread them on a baking sheet and bake while the oven is preheating until fragrant and toasty, about 5 minutes.
